Sweet n Sassy Bacon Dressing

5 slices bacon, about 4 oz.
1/4 c. red wine vinegar
3 T. honey

Fry bacon and reserve 2 T. of the drippings. Let bacon cool and crumble into pieces.

In a small bowl, mix honey and vinegar. Heat the 2 T. of bacon fat in the skillet over medium-high heat and carefully add honey-vinegar mixture. (Caution: Stand back from skillet so you don't get vinegar up your nose.) Cook for 1 minute, stirring constantly. Add salt to taste. Remove from heat and cool 2 minutes.

Serve dressing over 6 oz. spinach leaves and toss well. Sprinkle bacon pieces into spinach and mix. Serve immediately. (The fat from the dressing will separate if not served immediately.)
